私たちの氷見セラーがある北陸の秋は、海の幸、山の幸が一段と充実するまさに豊穣のとき。地元の滋味深い食材を思い浮かべながら、料理とともにじっくり楽しみたい白2本＋赤3本を選びました。
　白の1本目はオーストラリアでイタリア品種を手がけるピッツィーニのフィアーノ。柑橘や花の香り、ミネラル感とほどよい厚みがあり、魚介との相性も抜群。レモンを効かせたアヒージョや、香ばしく焼いた白身魚にもおすすめです。もう一本は、上級レンジでも世界的に高い評価を得るトリニティ･ヒルのホークス･ベイ･シャルドネ。ストーンフルーツや柑橘にクリーミーなコクと香ばしさが重なり、魚介から鶏料理まで幅広く活躍します。
　赤は、世界有数のピノ･ノワール産地オレゴンからA to Z 赤い果実とスパイス、心地よい酸が、採れたてのきのこや里芋、加賀れんこんなど、秋の山の幸に寄り添います。黒い果実やリコリス、胡椒のニュアンスを持つトゥルノンのシラーズは、鴨やジビエ、根菜を添えた肉料理と。そして少し熟成を経たピエロのファイヤー･ガリー･カベルネズ･メルロは、豊かな果実味と滑らかな口当たりで、氷見牛のような旨み豊かな牛肉と楽しみたい一本です。
　北陸の食材はもちろん、皆さまの土地ならではの秋の味覚にも。いつもより少し贅沢に旬を味わうひととき ―― 今年の秋を存分にお楽しみください。

Autumn in Hokuriku, home to our Himi cellar, is a feast of seasonal produce from both land and sea. With these local flavours in mind, we've selected two whites and three reds to make a good meal even more memorable.

First up is Australia's Pizzini Fiano ❶, an Italian variety with citrus and floral notes, a mineral edge and lovely texture. A natural match for seafood, particularly lemony ajillo or grilled white fish. Trinity Hill Hawke's Bay Chardonnay ❷ comes from a producer renowned for its world-class Gimblett Gravels Chardonnay. Stone fruit and citrus mingle with creamy richness and a hint of toast, making it a lovely match for everything from seafood to chicken.

For reds, Oregon's A to Z Pinot Noir ❸ brings bright red fruit, spice and refreshing acidity. Try it with sautéed mushrooms, taro potatoes or Kaga lotus root. Tournon's Shiraz ❹ offers dark fruit, liquorice and pepper, perfect for duck, game or roast meats with root vegetables. And for something truly satisfying, Pierro Fire Gully Cabernets Merlot ❺ has developed beautifully with a little age, offering generous fruit and a smooth finish. Just the thing for a good steak, perhaps even some Himi beef!
