While the three bottles differ in style, they all share a focus on balance. Rob Dolan ① is made using the Charmat method, where secondary fermentation occurs in the tank on lees. Delatite ② is a *pét-nat* (pétillant naturel), created by adding sugar and yeast at bottling to trigger secondary fermentation in the bottle.
