《超お買い得ブルゴーニュ的ワイン》
元国際線パイロット、ジョン･エリスの退職後の夢は、ブルゴーニュのようなワインを造ること。各地を調査し選んだ先は、1990年末当時は注目度が低かった冷涼な南ギップスランド。古代火山性赤土の粘土質土壌、標高200mの急斜面、水捌けの良い畑で灌漑せず、密植で少量のみ生産。冷涼地らしい快活な酸、白桃、ネクタリンの果実味。しなやかなテクスチャー。自然発酵後、澱と共にオーク樽で12ヶ月間熟成（新樽率10%）。

《Great value Burgundy-style white》
Former international pilot John Ellis’s dream after retirement was to make a Burgundian style wine. After researching various locations, he chose the cool South Gippsland region, which wasn’t attracting much attention in the late 1990s. Only small quantities are produced from unirrigated, well-drained vineyards densely planted on steep slopes at an altitude of 200m, in ancient volcanic red clay soils. Typical cool climate bright acid, white peach, and
nectarine fruit flavours, with a supple texture. After spontaneous fermentation, it is aged on lees in oak for 12 months (10% new barrels).
